Capsaicin is an odorless, colorless, oil soluble compound produced by the pepper plant. It is located on the crosswalls of the pepper fruit. The mouth perceives capsaicin as an irritant and causes the sensation of burning. Sweet or bell peppers contain no capsaicin.
