The Food Factor: Greek Island Salad

I don’t like to heat up the kitchen during the hot summer months, and salads are a great option for a cool meal.

I really enjoy eating Mediterranean style food and this tasty, protein-filled salad with Greek seasoning is perfect for me.

 

Greek Island Salad

Ingredients:

3 tablespoons vinegar

¼ cup olive oil

1 tablespoon Greek seasoning

2 - 16-oz. cans white beans, drained

1 - 15-oz. can quartered artichoke hearts, drained

1 jar roasted red peppers, drained and diced

1 cucumber, diced

½ pint cherry tomatoes, sliced

½ red onion, diced

Directions:

  1. Combine vinegar, oil, and seasoning in large bowl.
  2. Add beans, artichokes, peppers, cucumber, tomatoes, and onion to bowl and stir.
  3. Chill and serve.

Don’t have any Greek seasoning on hand? You can make it!

Mix together the following:

2 teaspoons garlic powder

2 teaspoons dried basil

2 teaspoons dried oregano

2 teaspoons salt

1 teaspoon pepper

1 teaspoon dried parsley

1 teaspoon dried rosemary

1 teaspoon dried dill

1 teaspoon cinnamon

½ teaspoon thyme

½ teaspoon nutmeg
