Summer Cooking Fun: Homemade Strawberry Popsicles

Video by Jonathan Parrish

Summer can be hectic and consistently getting nutritious snacks and meals on the table daily may seem overwhelming.

With more time at home, summertime is a great time to teach kids new recipes to help them step up their cooking game. Cooking at home is also a great way to save on food costs. Take advantage of this summer season and have some fun in the kitchen with your kids.

This cool, creamy, and nutritious summer fun popsicle can be made in five easy steps!

Strawberry Popsicles

Ingredients

12 oz. of full-fat Greek yogurt (or 2 6-ounce containers)

2 C. chopped strawberries, without stems

¼ C. honey

1 tsp. of vanilla

Squeeze of lemon

Steps

  1. Add the ingredients to a blender or food processor. If you don’t have a blender or food processor, a bowl and a spoon or whisk will work just as well.
  2. Blend or combine well.
  3. Pour the mixture into reusable freezer molds or small plastic or paper cups. If you use cups, insert popsicle sticks or wooden chopsticks cut in half in the center of the cups. This step may get a little messy with the kids, but having the help is well worth it.
  4. Freeze for at least four hours before serving.
  5. Enjoy!

Bottom line: Getting kids in the kitchen is an awesome way to teach them about food. Check with your local family and consumer science Extension agent to see what fun activities they are offering this summer.
