The Food Factor: Mediterranean Salad

Are you looking for a light entrée or a vegetarian side dish for a gathering of friends and family? Mediterranean Salad is an excellent choice.

It’s full of flavor and nutritious ingredients. Whole-grain rice and chickpeas provide high-fiber carbohydrates and protein that leave you feeling full.

It’s not only tasty, but quick and easy to make.

 

Mediterranean Salad

Ingredients

  • 1 ½ C. dry brown rice
  • ¼ C. olive oil
  • 1 lemon, juiced
  • 2 cloves garlic, minced
  • 2 C. cherry tomatoes
  • 1 C. olives, pitted and halved
  • 1 C. chickpeas, drained
  • ½ red onion, diced
  • 3 tbsp. fresh parsley, chopped
  • Salt and pepper to taste

Directions

  • Cook rice according to package instructions and let cool.
  • In a bowl, mix together olive oil, lemon juice, and garlic.
  • In a separate bowl, mix the cooled brown rice and all other ingredients.
  • Stir in the olive oil mixture.
  • Refrigerate for at least 1 hour before serving.

Tips: If you’re using bottled lemon juice, start with 2 tablespoons and add more as desired.
