The Food Factor: Lemon Pepper Salmon Patties

Video by Jonathan Parrish

These Lemon Pepper Salmon Patties are an easy, quick, and delicious way to incorporate this tasty and healthy fish into your menu rotation.

Salmon is an excellent source of protein, selenium, Vitamin B12, and heart-healthy omega-3 fatty acids.

Two servings per week of salmon can provide the recommended amount of omega-3 fatty acids for an adult.

Lemon Pepper Salmon Patties

Makes: 5 servings

Ingredients

  • ¾ C. breadcrumbs
  • ¼ C. reduced-fat mayonnaise
  • 1 egg, slightly beaten
  • ½ tsp. lemon pepper seasoning
  • 7 ounces frozen salmon, thawed, drained, and finely chopped (optional to remove the skin)
  • cooking spray

Directions

Wash hands with soap and water.

  1. Mix breadcrumbs, mayonnaise, egg, and lemon pepper seasoning in a medium bowl. Add salmon and mix.
  2. Measure 1/3 cup of salmon mixture (packed) and form into a round patty. Repeat until you have five salmon patties.
  3. Spray a skillet with cooking spray and set stove to medium heat.
  4. Place the salmon patties in the skillet and cook until light brown, 5 to 7 minutes. Flip the patties and cook on the other side until brown. Each patty should reach a final internal temperature of 145°F as measured with a food thermometer before serving.

Some grocery stores stock farm-raised fresh or frozen salmon. If you don’t have access to fresh or frozen salmon, you can find canned salmon on the same aisle as tuna in your grocery store. It provides the same protein and nutrients.

Looking for other ways to add salmon to your diet? Try some of these ideas:

  • Use canned salmon instead of tuna in your tuna salad.
  • Add canned salmon to your fresh garden salad.
  • Grill or bake herb-seasoned fillets with vegetables.
