Harvest of the Month: Tomato

Tomatoes are one of my favorite foods. I almost always keep some handy to snack on or cook with. My personal favorite are cherry tomatoes!
Did you know tomatoes are technically classified as fruits? Yep, store that away for your next trivia night! It’s the most popular garden vegetable in Mississippi and rightfully so! They’re delicious straight from the garden.
Tomatoes are loaded with health benefits, including fiber, potassium, and vitamins A, C, and K. Whether cooking with fresh, frozen, or canned tomatoes, the nutrients are all the same! If you have leftover tomatoes, cut them up and freeze them! This is a perfect way to avoid food waste and save them to make stews, soups, or sauces later.
