Harvest of the Month: Sweet Potato

Sweet potatoes are one of Mississippi’s top 15 commodities, with more than 30,000 acres harvested each year! They are a vegetable loaded with nutrients perfect for a balanced diet.
I love sweet potatoes because of their versatility. They can be grilled, boiled, sautéed, steamed, microwaved, or even served raw. I personally love roasting them in the oven alongside other vegetables. It’s easy, nutritious, and delicious!
Sweet potatoes can be found year-round in your grocery store. When purchasing sweet potatoes, look for ones that are small to medium in size, with firm, smooth, and even-colored skin. If you see potatoes with cracks, bruises, soft spots, or sprouting, leave them behind.
Did you know if stored properly, sweet potatoes can last for several weeks? Store fresh sweet potatoes in a cool, dark, dry, and well-ventilated spot. Do not put them in the refrigerator, as it will cause the sweet potatoes to change flavor and texture.
