Harvest of the Month: Corn

Ears of Corn

It’s my favorite time of year because sweet corn is in season! Corn is one of my favorite vegetables and is a food I eat on repeat during summer months. I love finding different ways to include it in meals!

Not only is corn delicious, but it also offers a variety of health benefits. It serves as a great source of fiber and B vitamins. It’s also a great low-calorie option to include in your diet.

When you’re at the farmers market or grocery store, choose ears of corn that have soft, green husks. Make sure the silks are dried. Corn is in season from May to September, so be sure to take advantage of it during these months. Even when it’s out of season, canned or frozen corn is a great option to cook with. The nutritional benefits are the same whether you choose fresh, canned, or frozen!
