Harvest of the Month: Broccoli

Broccoli is a tasty, tree-like vegetable that can be prepared in a variety of ways. Whether you steam it, roast it, toss it in a casserole, or enjoy it raw, it’s a nutrient-rich vegetable to add to any diet. It is high in fiber, vitamin C, vitamin K, iron, and potassium, just to name a few!
Broccoli is in season two times during the year in Mississippi: April–May and October–November. When you buy broccoli, avoid florets with an odor or that are turning yellow. Look for broccoli that is dark green in color and has firm stems.
Pay special attention to your broccoli when cooking it, as it is easy to overcook. The ideal texture is crispy and tender, not mushy and soft. My personal favorite way to cook broccoli is alongside other vegetables in a sheet pan meal!
